Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. OK, maybe more of a guideline. It's a seriously delicious combination though. This Smoky Grilled Pineapple Burger is always a crowd-pleaser at my house. It's not only Paleo, but Whole30, glutenfree, lower carb, and clean eating friendly. I promise you won't miss the bun! paleo, grilled pineapple burger, smoky

Hi there! Thanks for stopping by to learn a little bit about me. I'm Kerri, a mom of 4 originally from rural Colorado. I'm a fan of semi-colons, ellipses, and Oxford commas. I love good strong coffee and hanging out on Instagram and Twitter. Things like self-sufficiency, permaculture, and regenerative agriculture fascinate me. I'm passionate about strength, fitness, real food, relentless positivity, and debt-free living. I believe in a life lived on purpose. My life is a mindfully cultivated hodge-podge of bliss. I am a blogger, recipe creator, sentence maker, homeschooler, wanna-be farmer, rabid reader, distressed denim aficionado, SAHM, baker and candlestick-maker. Ok, I don't really make candlesticks... but I might try it someday.
My motto is: "Always Learning. Always growing."
Grateful to be Featured On:
My fitness and weight loss journey has been a bit long and winding, but I don't regret a moment of it. I am who I am because of what I've faced in life. I have been overweight most of my adult life, with brief successes off and on.
Long story short, I went from this:
Long story short, I went from this:
My highest weight (16 years ago)--250 pounds, Size 22
To this:
And blogged all along the way. I found running, lifting weights, and low carb paleo (life changing). I did the tough mental work that weight loss takes. I was transformed. My blog was a huge success; I was a weight loss success story...
Right here is where SURPRISE, I found out I was pregnant with Baby #4. I gained less than my previous pregnancies but still gained about 40 pounds. Here we went again...
195 - 3 weeks postpartum - July 15, 2013 |
I went in circles post-baby. In fact, I gained 27 additional pounds.
I was shocked at how my mental state slid back to where it was years before. I was feeling shame about my body and having the urge to binge and emotionally eat again. It was like being physically transported to my pre-weight loss body transported me mentally and emotionally as well. I had a lot to work through, AGAIN.
I had some major life changes. Like moving from Colorado to Idaho (2015) and later to Kansas (2019) and back to Colorado (2020) and then back to Kansas (2020). We left farm life and started fixing up old houses hoping to eventually get back to farm life debt free. My mom was diagnosed with Parkinson's. I battled with seasonal depression and fell back into old unhealthy patterns. I was 222 January 2017. That number pretty much scared me silly. I had managed to nearly get back to where I was at the very beginning.
Then, the worst happened. My older brother was killed in October of 2017.
I was destroyed.
Sometimes life knocks you down and sometimes life KNOCKS YOU FLAT. I don't know if you so much get over things like this as you simply live through them somehow.
What I now know for sure is that life is too short to spend one more second doing or being anything I don't want. Likewise, life is too short to spend one more second not being and doing everything I want.
Enough.
I realized keto (aka low carb paleo) was what works for me and went keto paleo (simply very low carb paleo for me) for good. Previously, I hadn't connected that whenever I went higher carb for very long (even strictly paleo), I gained weight like crazy. That led to this...
Then, my life had to blow UP in 2022 of course, and it took my a while to get back up, but the result has been starting over from scratch in all areas of my life.
2023 I'm down to 170 and not even focused on weight loss anymore. I want to get healthy. I want to get strong. In all aspects of my life.
Currently I have created my own plan from all of my past experience of trial and error (you can read about it here) I call it Low Carb Protein-Centric or LCPC. Barbell training has become a passion. CrossFit has returned in a big way for me. And I've started a PODCAST to help, motivate, encourage, and inspire others along their health and wellness journey and am generally loving life and pursuing my health and fitness with a whole new mindset (you can read about that here). Health and fitness are a journey not a destination.

Side note: People think I am keto (very low carb) for the weight loss, but that's actually not true. Yes, that's what I have blogged about, but it's far bigger than that for me. I know how to tweak keto for weight loss or for maintenance, but I'm keto for the health benefits. My grandmother died of ALS and my mother has Parkinson's. My family history is filled with diabetes and cancer. I've had some health issues personally. All of that considered, my experience and research points to keto (for me, a paleo version) as the best approach for me. I'm not going down but swinging! I currently do 20-40 grams of TOTAL carbs. I don't mess around with counting net carbs. This is a long-term lifestyle for me, for health reasons, not a fad diet.
No photoshopped journey here. I'm a real person. I struggle. But I'm not giving up. I fall down, I get back up; I fall down, I get back up. And frankly, I'm going to enjoy myself all along the way. :)
